If you want to be able to customize titles or descriptions without the app overwriting your changes, you will want to go into the content tab of the app, and under the bottom heading "Synchronization" you can turn off updates to those fields either for a brand, or for the whole store.
**We do recommend setting up some sort of catalog backup if you plan to do extensive manual editing of products. There are apps for this, or you can do a Shopify catalog export periodically.**
